EMILIA’S TAKE
There is something nostalgic about eating corn on the cob. It’s reminiscent of late summer evenings, eating outdoors.
Sweetcorn is butter’s best friend, and in this soup, you can taste the corn, the butter, and the unbeatable Latin American flavour combination of smoked paprika, lime, and coriander.
Naturally, toasted tortillas go fantastically with this dish, but why not go a step further, and serve quesadillas on the side.

4 corns on the cob | |
2knobs ghee* (clarified butter), butter* or refined coconut oil | |
1medium sweet potato | |
1tsp sweet paprika | |
2Tbsp olive oil | |
1medium brown onion (peeled, diced) | |
1/2tsp chilli flakes | |
1medium tomato (diced) | |
1tsp turmeric | |
1tsp smoked paprika | |
black pepper | |
1-2tsp sea salt | |
1 lime (juice) | |
1/2bunch fresh coriander |

Directions

Step 1
One by one, tilt the corn cobs down into a bowl, and holding the core, cut the kernels away from you, using a knife. This can be a messy job, so do it in the sink (or garden!) if you can. Break the cores in half and keep to one side.

Step 2
Heat ghee in a large saucepan and add the sweetcorn kernels, along with the sweet potatoes and sweet paprika. Stir-fry for 5 minutes.

Add olive oil if needed, then the onion and chilli flakes and cook until the onion starts to sweat, around 3 minutes.

Pour 1.25 litres of water into the saucepan, bring to the boil, then add the tomato, turmeric and smoked paprika. This is where you add the halved corn cob cores you kept to one side, with some ground pepper, and salt to taste.

Cover the pan with a lid and reduce the heat to low. Slow cook the soup for 25 minutes. Once ready, remove from the heat and transfer 2-3 cups of soup to a blender and blend until smooth.

Transfer the smooth soup back to the pot and stir. Add the lime juice and serve hot, garnished with fresh coriander leaves.
