Roasted squash with coriander pesto
One of my many fascinating episodes in life was when I worked for one of the leading supplement companies in the UK. I was just looking for part-time job to get me through the University and my tutor happened to send an e-mail about the vacancy – I am a big believer in luck/fortune/destiny (you name it!), and although the job was offered almost 1.5 hours away from where I lived, I decided to go for an interview and give it a shot.
I did not regret for a minute, as not only I have learnt so much about the supplements themselves, but I also had the opportunity to talk to a variety of people from all over (and not only) the UK, to whom, I hope, the conversations over the phone made some difference in life. But, foremost, I have met a great bunch of positive and inspiring people who bought me my first Yotam Ottolenghi’s cookbook as a farewell gift. I got absolutely fascinated by some of the combinations of flavours and textures that he offers and so my version of one of his recipes follows… Enjoy!
