Late summer sweetcorn soup
Corn on the hob is the best representation of late summer season – it’s sweet, yellow and stimulates digestion. It is important not to overcook the corn as it tends to get tough after approx. half an hour. A perfect culinary match for sweetcorn is butter and, as it is often used in Latin America, this recipe uses smoked paprika, lime and coriander. I will tempt you to try this soup for breakfast, maybe even with grilled quesadillas – and your breakfast will never be that exciting!
