Red onion & goat’s cheese tart
My life has been very busy lately due to long working hours, visitors and trips, and, as a result, I often found myself trying to create a meal out of very few ingredients and certainly not as many fresh vegetables as I’m used to. So today, as a result of being absolutely rubbish with shopping and forgetting to order veg boxes on time, I only managed to find a good kilogram of onions of all kinds in the pantry, some grass-fed butter and organic eggs, as well as a drawer full of nuts and seeds. However, to my surprise, a combination of these allowed me to create a delicious meal that will last until tomorrow (at least!), which gives me enough time to sort out my fridge!
Tarts and quiches taste great both hot and cold and so they are a perfect alternative to lunchtime sandwiches. As I was craving real, home-made food, I opted for making the shortcrust pastry myself, but if you’re pressed for time feel free to use good quality, ready-made pastry (check it doesn’t contain any margarine or palm oil). You can also experiment with filling – my other favourite is made of crispy bacon lardons and leeks.
