Celeriac: Unsung hero of January
I genuinely love vegetables, not just because they are supposed to be good for you, but also because they are so versatile and lift any dish with colour, flavour or texture. Deep purple aubergines, rainbow-like carrots and chard, mushy roasted courgettes, crunchy radishes, spicy rocket leaves… you name it and it’s there!
But, let’s be honest, some vegetables just don’t seem to have it… Unless you let them shine in a great, yet simple recipe. Like my unsung hero of January – CELERIAC! Yes, it doesn’t look attractive, and yes, it’s hard to peel, but it has a flavour, earthiness and texture like no other. And I am convinced that this recipe will quickly convert you into a celeriac lover!
